Bully had some pretty interesting Christmas-related missions.

I'd Love to play/own Snow Brothers for NES. Snif snif!!!
The Best Fighter in HISTORY!!!
I like Stay Frosty (a homebrew for the Atari 2600)
It's available to play online for free...

But I like playing it on a real 2600...
Of course, Mean Santa (Atari 2600) is my favorite...

but I'm biased because was one of the designers of the game.
I always like playing a little Pokemon during the Holidays...makes me totally nostalgic going through RBY and just reliving my childhood.
Recently, though, I just love sitting down with some RPGs and playing through some older stuff around Christmas. Last Christmas I finally played Parasite Eve and Suikoden, and I had no idea that PE took place right around Christmas, so that was really cool. The Christmas season is also great for the SMT games...I played the crap out of Persona 4 two years ago when it came out over Winter break...great game.
This year, I'm close to finishing Bishoujo Senshi Sailormoon: Another Story on the SNES and I think I might pick up and finally play all the way through Legend of Legaia.
Best Christmas themed game? ... Raw Danger! on PS2
seriously.
Christmas NiGHTS might be awesome, but is more like a demo, having only two levels.
Now Raw Danger! takes place over Christmas. You'll be putting on your Santa costume and rescuing some hapless citizens if you know what's up!
Christmas NiGHTS for me! NiGHTS is my favorite game of all time (I'm really not kidding...) and every Christmas I've got to see Santa take to the skies while I take to the skies!
I remember last Christmas I was also playing Burning Rangers...
every year I have to post this:
Maria's Christmas Box, available on C64 Atari ST and Amiga:

SpiceWare- We don't do Windows, it's too much of a chore
Artistic Overpass - nobody said roadways had to be drab
Medieval Mayhem - This ain't your father's Warlords
The Grinch on the Dreamcast
Well first of all, I like to play the snowy levels on Team Fortress 2. Valve always seems to have some more Christmas-and-winter-themed weapons, hats, and other decorations which get added during the yuletide season to the already large amassment from previous years. There's nothing quite like eating a chocolate bar before capturing a point while wearing a top-popped stovepipe hat and spinning a mini-gun wrapped in Christmas lights.
Then again, aren't all games' snow-and-ice themed levels better during Christmas time?
But for a truly Christmas-orientated game time, I have been playing Grubbins on Ice, the X-mas expansion to Costume Quest. I haven't seen much of snow or the other usual seasonal items, but I'm sure they're just a bit farther up the path.
And where the heck can a guy find a good online copy of the Pac-Man Christmas special? I don't want to go about buying a box set of the old cartoons just to see a single episode! But how else am I to find out if Pac-Man can help Santa save Christmas?
I found a Daze Before Christmas complete game way back in 2004 or so in second-hand shop in Spain. Not knowing about it, I didn't buy it (you can imagine how many times I've banged my head against the wall for not doing so). I'm pretty sure it was the Snes version and I recall quite vividly that cover with Santa getting out of the sack or whatever.
Years later, I see most people doubting that it was even released and makes me doubt I saw it back then. But I'm 99% sure it was that precise game I found, and I don't think there's a cover+name I could have been confused it with.
Step Back! This is my blast shot!
Found a really cool one, and its freeware too!
I don't have any Christmas related games but as for general Christmas gaming memories for me it has to be GoldenEye 007 because I received an N64 for Christmas one year and it was the very first console I ever owned on my own. (All previous consoles in my house had been "family" items or owned by my brothers).
I played that game for countless hours after that and it is all I can remember from my Christmas break from school. What a wonderful gift it was!
The NES DuckTales...that cartridge must stand out as one of my favorite Xmas gifts ever.
Although I do remember "showing off" on SMB2 to my cousins Xmas '88 (they seemed wowed I already knew how to warp to Level 4).
Play the SNES version of Donkey Kong Country 3 and type in the code "MERRY" for Christmas themed bonus stages after doing that LRLRLLRR trick at the new file screen.
