I'm not positive on this, but I'm willing to bet monies that those standalone dance mats that run on batteries with the A/V out cables are probably running NOAC's inside. So in a sense it has probably already been done.
It is also my understanding that Short Order/Eggsplode already bears a pretty good resemblance to DDR.

Even better if it can be adapted to run nsfs of your choosing, and if folks would make patches with music from different games. An edit mode for your levels would be sweet.

It's already been done. One of them was called Dance Mania 3 and was sold on QVC a couple years ago and it used an NoaC. It featured the dance game as well as "Pinball" and "Boxing." The dance part and Pinball were shown. Yeah, Pinball was the NES game Pinball with the copyright hacked out. Boxing was never shown so I don't know if it was a hack or an original game - my guess was on a hack of Punch-Out!! or Ring King. While I don't think anyone dumped the contents of that particular version, one of them (GLK Dance) has been dumped...
I've uploaded the ROM here, go ahead and check it out. I'll leave it up for a few days. And yes, in addition to the 8 bit DDR (even featuring 8 bit versions of some popular DDR songs) it also has a copyright hacked version of Pinball. No boxing game though... still curious as to what that was.

Speaking of Eggsplode, has anybody ever played that game naked? It's a hoot.
Eggsplode naked= disturbing and amazingly quite fun.
There was a DDR for GBC too.

I didn't know what NOAC stood for, so I looked it up on Wikipedia. It stands for NES-on-a-chip, in case anyone else was wondering.
