Well, you've stumbled across something I very much enjoy, some old-school 4 way challenges! Here's a list of a few of my favorites:
-General Chaos, An amazing game where you control different military characters with different weapons (flame thrower, machine gun, bazooka, etc). This is an arcade style game with cartoonish graphics that will keep you busy for hours
-NBA JAM TE; come on. With the option of playing as Will Smith, Hilary Clinton, or Heavy D this game will go a long way. Also has power ups and hot spots if you get bored with the standard game
-World Cup '94. My housemates and I just began getting into this and it's been great. Simple graphics and gameplay allow for very quick learning curve and lots of Sh*t talking!
-Mutant League Hockey!!! This game was the reason I began my Genesis collection. Trolls, skeletons and robots take to the ice with chainsaws, clubs and various other hazards. Good fights and lots of gruesome action!
There are plenty of other sports games out there and probably a few other good games I'm forgetting at this moment!
The Lost Vikings is 1-3 players. It's a pretty fun game that demands some ingenuity from it's players. It's like a platformer/strategy type of endeavor so it'll hold you and two other people for a while.
General Chaos is 1-4 players. In 4 player mode, two players can face off with another pair of players using soldiers that wield rocket launchers, machine guns, grenades and other implements of carnage. There's all different kinds of terrain and bonus objectives. Mindless violence... and terribly addictive.
Tiny Toons: Acme All Stars is 1-4 players. It's got a nice collection of minigames you and other people can play. I recommend the bowling, soccer, Montana bopping, and the obstacle course.
Edit: Also try NHL 95. In practice mode, you and 3 other people can have games with as few as 2 team mates per team. Really fun for bragging rights!

Mega Bomberman (A MUST if you own a Multi-Tap).
Gauntlet IV with some improvement over the arcade supports the Multi-Tap (fun with four players).
On a side note I'm having a hard time loving General Chaos, I think it's just me.
Yeah, I used to have the Electronic Arts 4-player adapter, and played General Chaos with my cousins all the time. The other EA Sports games were also eligible from I think around 94 on. Playing Madden or NHL with 4 was often kind of confusing though. As I recall, the EA one was only usable on the EA Games, whereas SEGA released their own 4-player adapter, which was usable on its games, but not EA's.

ZERO TOLERANCE for some authentic SYSTEM LINK TWO PLAYER FPS ACTION!
Columns III lets you use a multitap and the remaining controller port for 5 player Columns battles. That's really awesome.
Super Skidmarks, Pete Sampras Tennis, and the Micro Machines games (other than the first) all have two controller ports built in to the cartridge for 4-player action.
