My MVS has a standard 19" monitor in it.

I believe the MVS hardware is Standard Res only. The new Atomiswave hardware supports medium and standard I believe. www.klov.com states that Slug 5 uses standard res.

As does mine. It's a WG monitor, don't know the model number offhand. In any case Metal Slug 5 runs fine on it.

Well, assuming that your Vampire Saviour and X-men vs. SF are in either dedicated capcom cabinets (large blue machines with marquees that are like 9 miles in height lol) or Dynamo HS-5's (there would be a sticker on the top of the mahine in the back that says this, or maybe it will say model is a SF3, also, you'll have six screws to access the monitor from the back, and that's it. There is no way to get to the bottom of the cab), then you SHOULD (unless someone changed them out) have a standard 25" Wells-Gardner K7000 monitor chassis. There should be a sticker somewhere on it will say Model # is WGM7901 or something along that line. This is EXACTLY the same monitor that a dedicated MVS cabinet has, so you should have NO problem whatsoever running your games on these two cabinets. Metal Slug 5 runs fine in a dedicated Neo Geo machine, I am running 5 or 6 of them no problem. Just a little FYI, this "repairman" you talked to at your arcade (if this person is a friend, I apologize in advance) sounds like kinda an idiot. I have never heard of nor seen a "high" resolution monitor, and a medium res tube is only needed for either specific older titles (sega's nanao monitors...umm...daytona usa, title fight, virtua fighter, vf2, etc.) or new stuff that requires it for the graphics engines (i.e. San Fran Rush, Rush 2049, Cruisin Exotica, Fast&Furious, etc). Some games, like the Atomiswave board, or Blitz, can be dipswitch selectable for standard or med res, depending on what cabinet you are installing into. I would say prior to maybe 1996 or so, just about every game out there is standard (or "low") resolution, so basically everything is plug n' play as far as your monitors are concerned. IIRC, you can go backwards, as in, plug in a low res game on a med res monitor and it'll work. But if you plug in a med res game on a low res tube, your picture will not sync in, and the game is unplayable. There, now you've got your monitor lesson for the day. Class dismissed!!
