I know that the Tecmo Bowl games have repro carts with updated rosters. That may be the most authentic way to go.

I know they have an 06 and 07 version of Tecmo Super Bowl. I've played both of those and they were both fun and felt like the old game. They might have an 08 and 09 as well, but it's been a while since I checked.
Just as a heads up, though, teams added since 1992 (Jags, Panthers, Texans, Browns, etc.) are not in the game -- at least in the 06 and 07 versions.

EDIT: Didn't realize this was an actual cart until just now. Should have actually read the URL.
Regardless, if I still had an NES, I would shell out the money for TSB with an updated roster.
