Rock star, pop artist, rapper, whatever. You just have to be able to play the musician at some point in the game. Here's one to get things going:
Twisted Metal 4 - Rob Zombie is the driver of the "Dragula" car.
Can you think of any?

Journey, Journey Escape
... Does Wayne's World count?
In Hudson Hawk or the Die Hard games you can play as Bruce Willis.
Journey Escape on the 2600.
There were games on NES and SNES based on The Blues Brothers; I'd say they count.
For that matter, Dan Aykroyd's likeness also appears in Ghostbusters (Genesis) and Ghostbusters II (NES).
They don't really fit since you aren't actually playing as them, but it's always worth bringing up the cheesiness of the Sega CD "Make My Video" series (Kris Kross, INXS and Marky Mark).
Edit: Haha, two of my three legit nominations got mentioned by others while I was typing my post. You guys are fast.

David Hasselhoff is a downloadable character in Pain for the PS3. Also the Def Jam games.

Okay, here's one that's kind of out-there: The Three Stooges (NES). Larry Fine was actually a skilled violinist, and did his own playing in many Stooges shorts such as "Punch Drunks" (1934), which one part of the game is based on.

Rap Jam!
Eternal Sonata - Chopin.
I thought of that too, but you don't actually play as Aerosmith, however, you do in Guitar Hero Aerosmith! Guitar Hero World Tour, and the forthcoming GH:Metallica, also have playable famous musicians.
Anyway, away from rhythm games, I'm surprised no one has mention 50 Cent's game, Def Jam, or NBA Jam Tournament Edition, that game had Will Smith in it.
Space Channel 5 and Ready 2 Rumble.
Stranglers, Frankie goes to Hollywood, Wham, Beatles, Samantha Fox, Maria Whittaker (she sang), Kylie Minogue all these appeared in Computer and/or console games in the early/late 80s, or in Kylie's case, Street Fighter the movie, during the 90s (Although she did appear in the video game 'Neighbours' on C64 and Amiga computer as well)

Didn't the Genesis version of Shaq-Fu even come packaged with a CD single from his album? Certainly sweetening the deal right there. (I know, I know, he got skillz...)
Kind of unfortunate that we never got a game tie-in to Shaq's cinematic masterpiece, Kazaam, isn't it?
