Quite expensive, RGB is way better but if you're from the states you are probably lacking from scart inputs so S-Video is your best option.

It's been done plenty of times. It's not a particularly difficult mod, just lots of crap to do in order to make it happen I'm planing on building a circuit, but it'd be a lot easier if someone had pre-built circuits...
